KOBE BEEF AMONG THE FISHES

Scientific name: Letrinus harak
French: Bossu d' herbe, Emperor Lentilles
Japanese: Nisehana-fuetuki, Shimori-fuetuki
Cebuano: Katambak, Kirawan, Kiros, Uwan-uwan
Tagalog: Bakutut, Batilya, Kanupig

Upwards at $100 buck a cut, KOBE BEEF is truly a high end luxury. A fillet mignon of Kobe beef is utterly transcendent. Juicy, buttery with melt-in your mouth quality that puts even prime rib to shame. It epitomizes what a LUXURY FOOD is. A steak knife is not needed and thats how tender it is. It's so perfect that a dash of ketchup and other seasoning is not needed anymore. Remember that its a dairy product and have lots of omega 6 fatty acid in it.

This southern PHILIPPINE delicacy though rare as it is ( fishermen harvest tons of other species here but this species are captured only by about 30 kilos a day) also has qualities that can be called the way KOBE BEEF is. It also has a melt-in-your-mouth qualities and it also needs no seasoning to be appreciated as a luxury seafood aside from its healing and medicinal qualitiy. It is the "Katambak" in vernacular and its scientific name is Letrinus Harak or Lentjan, and have lots of omega 3 fatty acid too.

Too much of omega 6 rather than omega 3 fatty acid can lead to a coronary heart ailment, asthma, cancer, autoimmunity and neurodegenerative diseases all of which stem from inflamation from the body. The imbalance between omega 6 and omega 3 fatty acids may also contribute to obesity, depression, dyslexia, hyperactivity and even a tendency towards violence. Bringing the fats into proper proportion may actually relieve those conditions, according to Joseph Hibbeln, MD, a psychiatrist at the National Institute of Health and perhaps the world's leading authority on the relationship between fat consumption and mental health. At the 2006 Nutrition and Health Conference sponsored by the University of Arizona's College of Medicine and the Columbia University's College of Physicians and Surgeons, Dr. Hibbeln cited a study showing that violence in the British prison dropped by 37% after omega 3 and vitamins were added to the prisoners' diet.

If you follow an "anti-inflamatory diet", cut down on omega 6 diet and eat more oily fish. Believe me, your body and mind will thank you.

THE RELEVANCE OF ANTIOXIDANTS TO CELLPHONES

Lots of studies have shown different effects of microwave in cellphones. Cancer researches warn users to be aware of the fact that cellphones and their harmful effects are new territories to them that their observations couldn't match. They simply mean that they need more money and time to further study the same to be perfect about their scientific data.

One study showed 31 sperm samples after one hour of exposure to cellphone radiation showed the sperm becoming less mobile and more likely to die, oxidative stress were observed - an imbalance in the amount of free radicals which could lead to cellular damage. "This is certainly a preliminary and pilot study," the scientist said. "we feel that the results were striking because semen quality is significantly affected, even for the duration of one hour."

A video evidence showed a kernel of corn popping upon the ringing of four cellphones around. So maybe its high time to limit the usage, exercise caution, use hands-free cellphones and the use of text messaging for the meantime, are not bad ideas at all. And whenever there's an imbalance in free radicals in the body, it is important to take the necessary precaution, the use of ANTIOXIDANTS for protection is of great value.

MALUNGGAY-THE MIRACLE VEGETABLE

These Malunggay (Moringa Oleifera) seeds are discovered
by scientists to be a perfect water purifier.

Malunggay flower

Scientific Name: Moringa Oleifera

Malunggay-The Miracle Vegetable

Moringa oleifera (Ben oil tree) is the scientific name of the miracle herb often used as vegetable in the Philippines. It is added to a soup be it chicken, pork, beef or fish. In combination with first class fish it becomes a medicinal food for the very sick. The vitamins it carries is Vit. C and other minerals. People in India, Malysia, Thailand and the Philippines have been eating this leaves as part of their food for centuries with very healthy outcomes.

Mark Fritz of the Los Angeles times wrote: "Scientifically speaking, Moringa sounds like magic. It can rebuild weak bones, enrich anemic blood and enable malnuorished mothers to nurse their starving baby. Ounce for ounce, it has the calcium of four glasses of milk, the vitamin C of seven oranges and the potassium of three bananas.

"A dash of Moringa can make dirty water potable. Doctors use it to treat diabetes in West Africa and hypertension in India. Not only it can staunch a skin infection, but moringa also makes excellent fuel and fertilizer."

"It has triple the iron of spinach and more impressive attributes than OLIVE OIL. Both Moringa and the common carrots are diamonds in the roughage department, but Moringa has quadruple the beta carotene, though its green, which is good for the eyes and effective against cancer."

Fritz also reports on the positive results of using Moringa as a substitute for expensive whole milk powder in nutrition projects in depressed third world areas.

Properties of Moringa

1. galactagogue 11. considered abortifacient and emmenagogue
2. rubefacient 12. antioxidant

5. stimulant 15. anti-hypertensive
6. purgative 16. anti-arthritic
7. antibiotic 17. pain reliever
8. antifungal
9. anti-inflamatory
10. has anti-tumour activities on mice studies

THE REAL FOUNTAIN OF YOUTH

Scientific Name: Letrinus harak
These are grilled fish
Grilled Bangus

Grilled Bangus wrapped in aluminum foil, a good method of grilling
because the fish oil doesn't escape to waste.
Another good way to grill a fish because it saves the oil.
This is called galunggong- rich in anti-inflamatory fish oil.
This is called Tangigi.
Visayans call this fish-Katambak-scientific name: Letrinus Lentjan
Katambak is a First Class fish refered to as "TIL-OGON."

A Chicken soup recipe with malunggay leaves and green papaya slices that is rich in papain an anti-aging agent.
A fish soup called Sinigang na Bangus.

Here in the philippines, there's a way very sick people grapple with any disease aside from the doctors prescription. Its always food that makes the sick overcome their sickness and its a lifelong observation that I have been with, an information handed down from my long chain of ancestors. Every time one becomes sick in the family, or any family member in any Filipino home, there's always that acquisition of specific food recipe that I remember vividly. Its always the mother or a close relative that goes marketing for food that we call "TIL-OGON". A first class fish that costs 150 pesos a kilo to be turned into a recipe that we call "TINOLA" in vernacular, a soup garnished with "MALUNGGAY" added lastly before the food is served.

In my research, Fish oils actually has in itself a fat soluble vitamin called -d alpha tocopherol also present in nuts, vegetables, fruits and cereals too that are potent ANTIOXIDANTS that reacts with harmful FREE RADICALS in the body. These ANTIOXIDANTS are anti- cancer and anti-aging agents, that makes us all perform by interacting with free radicals which are atoms or group of atoms with an unpaired number of electrons which reacts with certain molecules present in the body, they can, once formed, start a chain reaction, like dominoes. Their chief danger comes from the damage when they react with cellular components such as DNA, or the cell membranes. Poor fuctioning or death may occur in cells if this happens and will happen when there isn't enough ANTIOXIDANTS to take charge. {NOTE: IF ANY ONE IS TAKING ANTIOXIDANTS TO COMBAT THE EFFECTS OF AGING, ITS AN ACT OF TRYING TO DRINK THE WATER FROM THE FOUNTAIN OF YOUTH-AND CALLING THAT BALONEY IS A MISINTERPRETATION OR CONFUSION ON THE PART OF THE SPEAKER.}

Although there are several enzyme systems within the body that hunts for free radicals, the principal micronutrent vitamin antioxidants are Vit E, betacarotene ( a vit A precursor ) vit C, and selenium that the body cannot manufacture by itself so they must be present in the diet.

A good vit A ( retinol ) source are: liver, egg yolk, milk, butter, spinach, carrots, squash, brocolli, cantaloupe peaches and grains.

Vitamin C, Ascorbic acid is present in citrus fruits and juices, green peppers, and cabbages.

Vitamin E is present in grapeseeds- a very potent one, nuts, seeds, vegetables, whole grains and fish oils.

All in all, a recently rediscovered potent ANTIOXIDANT source by a German scientist is a VIRGIN COCO OIL ( the healthiest oil on earth) found in the Philippines. It is capable of killing viruses, bacteria, protozoans, fungus, and is a MIRACLE CURE for almost all hard to imagine maladies in this century which can be safely called -"THE FOUNTAIN OF YOUTH." More on this "OIL" in the next issue!
